Other than the obvious SL91, Shuxe 1of1 guns.
Any Sheridan KP series, Tippmann SMG 68s, AGD X-Mags, Some rare cockers etc. they are out there, but that being said I don't see paintball guns being an investment.
I have my comparatively small collection causes I like different styles of guns. I also hang on to things my pro/carbine, PGP2, And Classic Mag are guns I have had new since the late 90s. I keep those around for memories sake, mostly they hang on the walls theses days but I do try to use them each at least once a year in game and now and then in the back yard shooting targets.
Then I think 3 markers brought to the field to be just about perfect (Pump, Mech Semi, Electro Semi). My self I bring along one more mech semi for when I want something with a bit more range or something I can run on Co2. It's also one the markers I don't mind lending out.
