I have seen people on several BSTs selling Flexes or Flex parts called "EPS" and "IZE". What exactly do these mean?

Just special releases, sometimes worth more. Like some IZE bottoms had different colored rubber rather than the plain black, obviously those are rarer since they arent made anymore. And besides what's cooler than a clear proflex

EPS flex parts are the most recently made parts, which also in turn makes them the most easily obtained and cheapest. IZE and HB flex parts were made in the later 90s to early 2000's, which are now considered rare and make them harder to find and more expensive to purchase. Naughty Dog parts are also rare, you'll see them with a dog print as their symbol instead of the JT logo. Then there are the super rare parts that don't really have a group name they go by, just how they look. Skulls, Bubble, Carbon fiber frames will set you back a very shiny penny. Old school Revolution/Revo parts are pretty expensive as well.

Just remember that older and harder to find does not mean its better. People drop so much money on styled straps or frames when a new strap and new frame that isnt covered in someone's sweat is much nicer. the strap craze and the bandana/headband craze with buying and selling old used cloth is gross.
also at one point youll find "boat" bottoms, heres a hint, they obstruct breathing and the plastic collects water in your mouth, annnnnd normal flex bottoms are still nicer
