I always butter both sides and use lid, maybe the cheddar will help and putting the second slice on late.
Cheddar will pretty much never get runny, and completely lose its shape...which is coo (and it taste gud). Its a bit harder to melt which is why you leave the top slice off, and lid it for a bit.
